Just add water - the Dried Food RevolutionStarting in 2004 with a very basic dryer they began to experiment with the drying process on different foods from nettles to bananas. Drying concentrates flavour, preserves vitamins, is economic with energy and once the food is dried all you need to keep it is a sealed container – no refrigeration, no freezing, no waste.
In global terms this is hardly a major discovery. Food cultures from the Middle East to the Baltic dry vegetables, grains and fruit. Elsewhere you find dried meat and fish. In all these places drying is a traditional and necessary method of preservation – perhaps the oldest known to humankind. The results are used all the time and form an essential part of the regional cuisine.
We want to show you how good dried foods can be with our expanding range of traditionally inspired risotto, couscous, pilaffs, puddings and compotes. As we travel more and taste more we’ll share our experiences with you by way of new recipes using authentic ingredients from across Southern Europe and the Near East. We’d like you to have as much enjoyment from eating our foods as we’ve had in finding, tasting and adapting them.
